Pig Candy Bacon

As a general rule, everyone loves bacon.  I REALLY REALLY LOVE BACON.  Especially good bacon.  This recipe is a southern, slightly spicy twist, on the regular bacon that we all know and love.  I have been known to eat way too much of this at a single sitting. 

  • 1 pound of your favorite brand of bacon - thick cut works best
  • 3/4 cut of brown sugar (must be dry)
  • 1/4 teaspoon of cayenne pepper - adjust to taste
  • Aluminum foil
  • Cookie Sheet
  • Small mixing bowl


1- Pre-heat your broiler (set the broiler tempurature on broil)

2- Cover the cookie sheet with aluminum foil.

3- Set the oven rack in your broiler to about 6 inches below the top of the overn

4- Mix the dry brown sugar and the cayenne pepper in the small bowl.

5- With your hands, pat the dry brown sugar and cayenne pepper mixture evenly on both sides of each strip of bacon and lay on the aluminum foil.  Place cookie sheet in the broiler

6- While carefully monitoring the cooking process, cook the bacon evenly on both sides, turning as needed.

7- After cooking the bacon, carefully "blot" the bacon with a paper towel to remove excess fat.  With Pig Candy Bacon, you will find that the paper towel will want to stick, so be careful.

8- There will be little shrinkage to this cooked bacon and it tastes great cold - a sweet accent with just a hint of spice from the cayenne pepper.

This recipe is terrible for both your waistline and cholesterol.......I don't care, I love it.
